HOW FREEZE DRYING WORKS

The 3 phase process

This causes the ice crystals to turn into water vapor, which is then removed from the chamber by a vacuum pump. This process can take several hours to several days, depending on the type and quantity of food.The final stage is secondary drying, where any remaining moisture is removed from the food at a slightly higher temperature than in the previous stage.
